The story of my childhood.

As I drove home from the gymnasium, I began to think about this mac & cheese. I complained loudly and to myself about the long, straight road that leads to my home from the gym. Why am I forced to drive in a straight line and for such a long distance?

Why can't I teleport to avoid driving these long straight roads? I'd rather be rolling in a bowl full of creamy, cheesy goodness.

This is not what happened. But then I'd be lying.

See? I'm 5.

  • You can turn it into a side by removing the pulled pork. Don't. You could. But don't. You got it?
  • This is a simple recipe. I made it fancy for you and substituted some of the cheddar with hickory-smoked Gruyere. You know what? You know what? Save your money and buy the old standby cheese, cheddar.
  • You're probably wondering "WHO EATS MAC AND CHEESE AFTER A TRAINING?" and if my "hi, my blog is healthy!" thing makes sense. This girl does eat mac and cheese following a workout. Why? This recipe is SKINNY.

Ingredients

The first part is just onions. You can also see what I used to make the exact same recipe as mine.

Caramelized onions are a delicious treat.

  • 1 cup of small onion thinly cut (about 1.5 cm)
  • Half a tablespoon of butter

The mac n' cheese:

  • Whole wheat macaroni 4 oz
  • I used 1% HTML0 for 1/4 cup of milk
  • 1/4 cup fat-free half 'n' half
  • 1/8 tsp smoked paprika
  • To taste or 1/4 tsp of salt
  • To taste or 1/4 tsp of pepper
  • 1/4 tsp. garlic powder
  • 1/4 tsp liquid hickory smoke
  • 4 oz of reduced-fat cheddar, grated (about 1 packed cup).
  • 1/4 cup + 1 tbsp low-sugar BBQ sauce (I used KRAFT light BBQ sauce)
  • 1/4 cup cilantro, diced
  • Leftover 3/4 cup pulled pork

Instrucciones

Preheat

Heat your broiler on HIGH. Spray a 1-quart baking dish with cooking spray. Set aside.

Caramelize

Melt 1/2 tbsp butter in a medium pan on MEDIUM. Stir the onions thinly sliced, ensuring that all slices are evenly coated with butter. Stir the onions about every 5 minutes until they are soft and golden brown. This will take approximately 25 minutes.

Boil

Cook the macaroni according to your package instructions. Drain the pasta, and then return it to the burner at LOW.

Whisk

In a large bowl, combine the milk with the fat-free half and half, smoked pepper, smoked paprika powder, garlic powder, liquid smoke, and salt. Pour the milk over the noodles and stir well.

Add

Once the cheese has melted, add in the caramelized onions, BBQ sauce (taste as you go to get your desired level of smokiness), chopped cilantro and pulled pork. After the cheese melts, add the chopped cilantro and pulled pork. Stir until all ingredients are well mixed and creamy.

Pour

Pour the mixture in the casserole dish prepared and sprinkle the remaining 1/4 cup cheese on top.

Broil

You can broil the cheese for 2 to 4 minutes depending on how crispy and brown you want it. Let cheese stand for five minutes before serving.

  • Instead of telling what to use I will tell you what NOT use. Do not use almond milk in this recipe. I've never used regular milk because I always thought almond milk would be a good substitute. It wasn't until I made macaroni and cheese that I realized this. This was awful the first two times I tried it with almond milk. I didn't want you to do the same thing as my taste buds. It could be made even lighter if you used all milk in place of the half-and-half. For the few calories the half-n-half adds, you shouldn't sacrifice the creaminess.

  • Why not? It's possible that it is a bit over the top. It's not. It's your food, so you can leave it out, or... add more.

Can I double this recipe?

The recipe is for a small amount because there are only two of us living in the home. You can easily double the recipe (or triple it if you want to get crazy)!

How do I make this creamy?

If you like it creamy, serve it straight from the pan.

Do you think it will work on beef?

You could also try it with chicken! It would also work with chicken. Simply shred it up and throw it in!

How to store healthy Mac and Cheese

Cold pulled-pork macaroni and cheese is the best thing to eat with pulled-pork. You can keep the mac and cheese in your fridge for 4 days if you store it in an airtight jar.

You can heat it up in the microwave or in the oven. Sprinkle water over it in the microwave and cover it with a wet cloth to keep it moist. Set the oven to 350degF and cover the healthy macaroni and cheese with aluminum. Cook for 20 minutes. On the stove, you can add some milk or cream to the mac and cheese. Stir it regularly until the temperature you want is reached.

It can be frozen. Store it in an airtight jar for up to three months. Let it thaw overnight in the refrigerator before heating.

  • 1/4 cup milk I used 1%
  • 1/4 cup fat-free half and Half
  • 1/8 tsp smoked paprika
  • 1/4 tsp salt or to taste
  • 1/4 tsp pepper or to taste
  • 1/4 tsp garlic powder
  • 1/4 1 tsp liquid smoke
  • 4 oz reduced fat cheddar cheese grated (about 1 packed cup).
  • 1/4 cup +1 tbsp low-sugar BBQ sauce I used KRAFT light BBQ sauce
  • 1/4 cup cilantro diced
  • 3/4 cup leftover pulled pork

Instructions

  • Heat your broiler on HIGH. Spray a 1-quart baking dish with cooking spray. Set aside.
  • Melt 1/2 tbsp butter in a medium sized pan on medium heat.
  • Mix in the onions thinly sliced, ensuring that the butter is evenly coated on all slices.
  • Reduce the heat to LOW-MED, and stir the onions about every 5 minutes until they are soft and golden brown. This should take 25 minutes.
  • Set a large pot with salted water on to boil, and then cook the macaroni according to your package instructions until it is al dente.
  • Drain pasta and return it to the burner on LOW heat.
  • In medium bowl, whisk the milk with fat-free half and half, smoked pepper, salt, garlic powder and liquid smoke.
  • Pour the milk over the noodles and stir well.
  • Add 1/4 cup of cheese, in small amounts. Let it melt between additions.
  • Stir in the chopped cilantro and pulled pork* once the cheese melts. Stir until all ingredients are well mixed and creamy.
  • Add the remaining 1/4 cup cheese to the casserole dish. **
  • You can broil the cheese for 2 to 4 minutes depending on how crispy and brown you want it.
  • Allow to stand for at least 5 minutes before you serve.
  • Enjoy hot food!

Notes

This dish can be made vegetarian by omitting the pork. It is also great as a side.
You could remove the extra cheese from the top of the dish to make it lighter, but don't. If you prefer it creamy, serve this right out of the oven.
